Shrimp Scampi with Linguine

- 1 pound linguini
- 4 tablespoons butter
- 4 tablespoons extra-virgin olive oil plus more for drizzling
- 2 shallots finely diced
- 2 cloves garlic minced
- Pinch red pepper flakes optional
- 1 pound large shrimp peeled and deveined
- Kosher salt and freshly ground black pepper
- 1/2 cup dry white wine
- Juice of 1 lemon
- 1/2 lemon zest grated
- 1/3 cup chopped fresh parsley leaves Italian parsley – flat

Drizzle a tablespoon of oil in a large pot of salted (like the ocean) rapidly boiling water, add linguine and cook according to directions on the package.

Meanwhile, in another large heavy-bottomed skillet, melt 2 tablespoons butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, salt and pepper, red pepper flakes, and saute until the shrimp have just turned pink (about 5 minutes), stirring often. Remove shrimp from pan. Add white wine, lemon juice, lemon zest, 2 tablespoons butter and parsley. Bring to a low boil. Return shrimp to saute pan.

Drain pasta, place in a large dish, pour shrimp scampi and sauce over pasta. Toss gently!
