PASTA PRIMAVERA

Serves 4
• 1 box chickpea pasta
• 1 small eggplant, peeled
• 2 broccoli crowns
• 4 oz. mushrooms
• 1 bell pepper
• 2 medium tomatoes
• red pasta sauce as desired
• 2 garlic cloves diced or minced
• olive oil
• salt
• pepper
Directions
1. Boil water in a medium saucepan; prepare
pasta as directed.
2. Cut up rinsed vegetables into small pieces.
3. Sauté vegetables in a large skillet using a
small amount of olive oil.
4. Add the red pasta sauce over the vegetables
and simmer until the pasta is finished. Drain the
pasta and add to the vegetable red sauce mixture.
5. Season with salt and pepper and any other
herbs or spices as desired.
