Carrot Cake With Walnuts (Eggless)
Ingredients
Cake Ingredients
- 2 cups of self-rising flour
- 3 cups of very finely shredded carrots
- 1 cup of roughly chopped walnuts
- 1& 1/4 cups of vegetable oil, preferably Canola
- 1 & 1/2 cups of sugar. I take a mix of white & brown
- 1 tsp of pure vanilla essence
- 3 tsp of ground cinnamon powder
Ingredients for Icing
- 1 stick of melted butter
- 8 ounces of cream cheese
- 1 tsp of pure vanilla essence
- 1 & 1/2 cups of powdered sugar
- 1/2 tsp of ground ginger
- 1 tsp of ground cinnamon powder
Instructions

In a bowl, put self-rising flour and add sugar.

Stir in vanilla essence, cinnamon powder, shredded carrots, & oil.

Stir vigorously

Add the walnuts

Grease a deep cake pan and bake for 50 minutes on 350 degrees C. Cool on a rack. I ice the cake the next day.
Icing

Mix all the ingredients together and whisk for about 5-7 minutes until the icing is smooth and creamy
Recipe Notes
If you like your cakes with less icing, use only half of each icing ingredients.
