THE BERNARDS-RIDGE CONNECTION PAGE 5 SEPTEMBER/OCTOBER/NOVEMBER 2022 theconnectionsnj.com “I grew up in a small apartment in Paterson, NJ with my mother, who came to America from Peru when I was small. My mother wanted to give me the opportunity of a safe, quality education, but she knew that would not be possible in the Paterson Public Schools. If it had not been for Tri-County’s Scholarships, I would never have been able to receive the education and self confidence I developed at St. Gerard School and DePaul Catholic High School. I am currently on full scholarship at DeSales University where I have earned a 4.0 GPA, and plan to become a lawyer. I am grateful to Tri-County for helping me to become the person I am today.” —Jesus Delgado, Junior, DeSales University, past Tri-County Scholarship recipient Forty-one years ago, Tri-County Scholarship Fund (TCSF) was founded to improve the lives of New Jersey’s most financially vulnerable children by providing them access to the superior and safer option of values-based K-12th grade independent schools. “We believe that every child deserves access to a safe, quality education regardless of their family’s zip code or income level, “ says TCSF President, Prudence Pigott. “In many poverty stricken zip codes, the public schools are trying, but not able to deliver an environment that encourages success. There is little in the way of a positive peer group, of character development, or educational excellence. Our parents seek a better option for their children, and Tri-County makes this dream a reality by awarding partial scholarships to better, safer schools.” The majority of scholarship students come from inner-city, single parent homes with an average household income of $30,000. 85% of scholarship students are racial and ethnic minorities. With a 41year proven track record, Tri-County points to a winning formula of shared commitment: TCSF provides partial scholarships, the partner schools offer discounted tuition, and parents sacrifice to pay their share. All are invested in the students’ success. As a result, the students feel believed in and make the most out of the educational opportunity. “By awarding scholarships and educational opportunity, Tri-County breaks the cycle of generational poverty,” says Pigott. “Providing access to a quality education makes all the difference. 100% of our scholarship students graduate from high school. They go on to college, successful careers, and give back to their communities. With this education, their lives are no longer pre-determined by zip code, poverty, family situation or race.” TCSF measures its own success by the numbers of happy, grateful and thriving alumni who are positively impacting their families and their communities – over 35,000 students since 1981. Tri-County’s largest fundraiser, the 41st Annual Awards Dinner, will be held Tuesday, November 1st at the Parsippany Hilton. This year’s Awards Dinner, an in-person gala, promises to be an inspiring event bringing together over 600 supporters to help children receive the life-changing gift of a quality, safe, values-based education. This year’s prestigious honoree is Juan C. Andrade, President & Chief Executive Officer of Everest Re Group, LTD. We recently explored an area of the farmwe hadn't seen before and came across the ruins of themanor house of Jared Haines. The sunlight on the large remaining wall being slowly reclaimed by vines created an arresting image that I wanted to capture.” Please read his impressive bio on page 8. For centuries this region quietly produced wines from the Gamay grape, consumed locally and in bistros and restaurants from the Mediterranean to Paris. In villages of the region, the completion of the harvest was celebrated with the barely fermented new wines or “nouveau” Beaujolais. In the 1970s, this celebration caught on outside the region, first in Paris, then around the world. By law the wines could not legally be released until the 3rd Thursday of November, so racing to become the first to sell them became all the rage. In the beginning, this was a huge boon to the growers. “Nouveau Beaujolais” short fermentation period allowed producers to clear their inventory and get paid in months rather than years. Nicknamed “Chateau cash flow”, this caused production to soar, but quality suffered. When the bubble burst and the infatuation died off, it left a bad taste in the mouths of many consumers. But therewere a handful of growers who never signed onto the Nouveau craze. They believed that traditional winemaking, quality over quantity, was essential and moved “back to nature” with organic, biodynamic, and natural grape growing and winemaking. Today many more are following the trend. The top wines from these growers are highly sought after by connoisseurs and top Sommeliers and are now found on the lists of some of the best restaurants in the world. There are several levels of Beaujolais production, mainly driven by the unique soils and terroir. Beaujolais AOC is a lighter, fruitier wine mainly from vineyards in the south. Moving north is the Beaujolais-Villages AOC, with steeper hills, higher altitude, and soils composed of sandstone, schists, granite, and some limestone. The wines are a step up in terms of the body while maintaining a fresh, fruit-driven nature. The best sites are the hillside vineyards surrounding the ten “Cru Villages”, with more structure and complexity than simple Beaujolais – sometimes more reminiscent of their Pinot Noir based cousins to the north. The best can age for a decade or more, yet most are medium-bodied, accessible when they are young, and work with food much like Pinot Noir, pairing with poultry, game birds, grilled meaty fish, and lighter meats like pork or veal, burgers, steaks and chops. Lighter Beaujolais and Beaujolais Villages are also great summer reds, served with a slight chill. Prices range from $10 - $15 for simple Beaujolais, and from the high-teens to the mid $30s for the top producers and Crus, making them quite a bargain. With a series of excellent vintages on the market, it is an excellent time to explore a region on the move. Cheers! theconnectionsnj.com EAT, DRINK & CELEBRATE PAGE 19 While river cruises have been very popular over the years, one cannot mention the explosion of interest from the American market owing to the masterpiece series, Downton Abbey. Those Viking River commercials had our offices buzzing with clients who wanted more information. And as our clients returned, many wanted to book another and bring their friends and family along. So here is a brief synopsis of the River Cruise industry. Europe, we have the Danube, Moselle, and Rhein rivers with most cruise lines offering itineraries of the storybook landscapes and villages along the routes. On my first river cruise, I chose Ama Waterways, a deluxe line, from Budapest to Vilshofen Germany, and then a 3-night post-cruise in Prague. The highlights for me were the amazing shore excursions and cuisine on board, where they offered a different wine each night from the very port we visited. I was hooked! I only wish I had booked the 14-day cruise, which ended in Amsterdam. I am scheduled to return to Europe next year for the Christmas Markets Cruise. Europe also offers the French waterways with varied itineraries, sailing both northbound and southbound from Paris and visiting the best regions of France including Bordeaux, Normandy, and Provence - An explosion of scenery, history, and the infamous French Cuisine. There is also the Douro River in Portugal. Sailing from Porto through the magical Douro Valley is a great way to see this northern region of Portugal. In North America, we have American Cruise Lines, with river cruises on the Mississippi, and Columbia and Snake Rivers in the Pacific Northwest. Asia. We have the Mekong River cruise, which highlights Cambodia and Vietnam. A pre or post itinerary to visit Siem Reap and the Angkor Wat Temple complex is a must. I was there on the Vernal Equinox which allowed me to witness the sun rise over the main temple. That and the blessing by Buddhist monks made this a highlight of my travel experiences. Africa. We have the Nile River Cruises in Egypt. Offering 3, 4, or 7-night Nile Cruises with fascinating land itineraries in the land of the Pharaohs. And the Zambesi River in Zimbabwe with a pre-set itinerary that includes a Safari. theconnectionsnj.com EAT, DRINK & CELEBRATE PAGE 20 40 O 7 D W • C W H Having the philosophy that every time of life is unique and special, I have walked into each new phase with the assumption that I would find my way. Marriage, career, motherhood, empty nesting all presented their challenges and rewards, but I quite blithely assumed there would always be a road map to the future that would present a predictable path. After all, so many of my peers have typically experienced the same challenges and rewards. The baby boomers are a most formidable group, perhaps our sheer numbers alone make it so. We have done things en masse as no other generation has done to my knowledge. My mind is opened, and my eyes are awakened to the reality, however, that entering our senior years follows less of a predictable path, the aging process varies quite drastically from those who are healthy and well enough to enjoy the senior years, to those who are struggling to survive. Using my determination to find the unique and the special has pushed me to redefine this next time of life, this next chapter, as a New Time of Life! I am excited about what is unfolding in front of me. Preparing our treasured Watchung home of 38 years for another family to love and appreciate, wondrous memories of beautiful memories flooding my heart; enhancing my brain power by learning to play golf and work more strategically at word games; returning to group exercising for the socialization and camaraderie, as well as concentrating on balance, flexibility and muscular strength; recognizing that socializing over a meal provides the opportunity to enrich a relationship; joining, and even creating clubs that I would not have had the time previously are all leading to feelings of empowerment, rather than debilitation. As I look around, I sense that being optimistic is a tool I need to keep handy. After all, the aging process is not attractive as the beauty of teens maturing into early adulthood. But there is something extremely attractive about a positive attitude, a genuine interest in others, reaching out to those in need, the confidence that comes from living and growing, and most importantly of all, feeling fulfilled and successful, rather than a feeling of no value. It is easy to compare and predict the future based on others’ experiences, but nothing is written in stone. Perhaps in a different era we would believe that there is some sort of straight line to and through the aging process, but this is not true anymore. Today’s seniors have healthier foods, access to exercise, brain teasers and stimulators, high caliber medical care and the reality that socializing keeps us feeling younger. Many of our generation are traveling, exploring, developing hobbies, taking advanced courses at colleges and universities, mentoring, and challenging ourselves. There is little reason not to use this gift of time to our advantage. As we prepare to close the door to our home, carrying our memories in our hearts buoys me. The second-grade report cards are imprinted in my mind, the prom dresses will be worn by another young beauty, and the artwork collection will move along with us, hung on different walls. Life will change. That will be the constant. I am excited by the future, excited by my dreams, excited by the possibilities. Never has the statement, “not getting older, getting better” felt more timely, and never have I been more thankful for that tool of optimism! Paraphrasing Red, portrayed by Morgan Freeman in the beautiful movie, Shawshank Redemption, “I hope our new life brings us a peaceful happiness, I hope we can further enrich our lives, I hope our family continues to grow and loves to visit often, I hope…” As I look around, I sense that being optimistic is a tool I need to keep handy. After all, the aging process is not attractive as the beauty of teens maturing into early adulthood. Embracing a New Time of Life SLICE OF LIFE By Ellyn Mantell

FRE EMAN, VMD, MS Several generations ago it was common to feed pets leftovers from the family dinner table as their sole diet. However, as our understanding of veterinary nutrition evolved, commercial pet foods were designed to provide a more complete, balanced, and consistent diet for our pets. It also became apparent that dogs, cats and humans all have very different nutritional needs. Dilated cardiomyopathy (DCM), a serious type of heart disease that leads to heart failure and death, was one of the first medical conditions caused by nutritional deficiency to be identified in dogs and cats. Taurine deficiency in pet food was discovered to be the cause as it was discovered that dogs and cats need significantly more taurine in their diets than humans. Recognition of this and other variations in species’ micronutrient requirements led to the development of the Association of American Feed Control Officials (AAFCO), who along with the Food and Drug Administration (FDA), ensure that commercial pet foods meet the minimum nutritional requirements for each species. For years following, diet-associated DCM cases were seen only in pets fed home-cooked or other non-mainstream commercial diets. Inmore recent years, consumers have a preference for pet foods that look more appetizing to people, as well as more natural and organic to avoid antibiotics and pesticide residues. They also prefer grain-free foods to avoid gluten intake for the treatment of allergies and as a means to avoid corn - a food that is known to be genetically modified. These consumer preferences have resulted in major changes to the pet food industry and huge growth in the sale of raw diets, smaller boutique brand pet foods, and grain-free diets. But cats and dogs are not small people and dietary tolerances differ. For instance, chocolate and grapes are toxic to dogs, but not to humans. And while food allergies are not uncommon in dogs and cats, the most common food allergens for them are not grains, but are actually the most common protein sources used in pet food – chicken and beef. In July 2018, the FDA published its first warning about diet-associated DCM in dogs after veterinarians were reporting a higher incidence of the disease in dogs fed boutique and grain-free diets. In June 2019, the FDA updated its warning and provided data about the number of reports, breeds affected, and the pet food brands most involved (this information is available online). This data reported that 90% of the diets fed to affected dogs were advertised as “grain-free” and 93% used peas and/ or lentils as the grain substitute. Research is still ongoing to better understand the mechanism behind the changes to the heart muscle that occurs with these diets, but it does not seem to be due to taurine deficiency. The good news is that these changes are reversible, particularly if the diet is changed before serious heart muscle remodeling and heart failure have occurred. Thus, the general consensus amongst most veterinarians is that diets containing peas, lentils, or other legumes as the major carbohydrate sources should be avoided. Concurrently, there are also many pet owners who prefer to home-cook meals for their pets. However, even for veterinary nutritionists, it can be difficult to properly balance homecooked diets to ensure all of the necessary vitamins, minerals, and micronutrients are included. Chicken and rice-based diets, although commonly recommended as easily digestible diets for short-term feeding in pets with stomach upset, are notoriously nutritionally deficient, especially in iron and calcium. Feeding a primarily AAFCO-approved commercial diet with a smaller portion of home-cooked ingredients and a pet multi-vitamin may be the compromise for pet owners who still wish to home cook for their pets. Veterinarians recognize that each pet has different dietary needs based on their age, activity level, and the presence of any concurrent medical conditions. As such, pet owners should consult with their veterinarian when deciding upon what diet is best for their pet. At KIND Veterinary Care Center, we are committed to providing exceptional and compassionate lifelong care for our patients. As a full-service veterinary hospital, we offer comprehensive and convenient medical, dental, and surgical services with a personal touch.
