I enjoy it all year round, not just the cool months. Making different soups each week provides great variety. Each batch makes enough for 6-8 servings. Slow and long cooking, then overnight in the fridge for best flavor. Soup is always best the next day. Leftovers are apportioned into pint-size containers for freezing. Ten minutes in the microwave and provides a healthy, hearty, home-cooked meal. However, the microwave makes the bowl too hot to handle. So, rather than grab potholders, I use a soup bowl cozy.
