THE WARREN-WATCHUNG CONNECTION PAGE 28 APRIL/MAY 2022 theconnectionsnj.com INGREDIENTS Cake 2 eggs 1 carrot (shredded) 1 banana (cut into small chunks) 2 tbsp honey 1 ½ tsp baking powder ¼ cup vegetable oil 1/3 cup unsweetened applesauce 1/3 cup creamy peanut butter 1 cup flour Frosting 2 cups plain Greek yogurt ¾ cup creamy peanut butter Dog treats/kibble to decorate Instructions • Preheat oven to 350oF. Spray cooking spray in two 6-inch round cake pans. Line cake pans with parchment paper on the bottom. • In a large bowl, combine eggs, applesauce, oil, peanut butter, shredded carrot, diced banana, and honey. Whisk until smooth. • Add flour and baking powder to the bowl and mix. The mixture should be thick. • Bake for 28-32 minutes. • Let cool for 10 minutes before removing and resting on a cooling rack. Cake must be cooled to room temperature before applying frosting. • Once the cake is cooled, mix the Greek yogurt and peanut butter in a bowl with a hand mixer until light and fluffy. • Place the bottom layer of cake on a serving plate. Spread a generous amount of frosting on the top and spread it out to the edges. • Layer the other piece of cake on top then frost the top and sides of the cake.
