By: Rosemary Scoleri Paisano's Restaurant Ingredients: 1 pound linguini 4 tablespoons butter 4 tablespoons extra-virgin olive oil, plus more for drizzling 2 shallots, finely diced 2 cloves garlic, minced Pinch red pepper flakes, optional 1 pound large shrimp, peeled and deveined Kosher salt and freshly ground black pepper 1/2 cup dry white wine Juice of 1 lemon 1/2 lemon, zest grated 1/3 cup chopped fresh parsley leaves (flat Italian parsley) Rosemary Buon Appetito! SHRIMP SCAMPI WITH LINGUINE Directions: Drizzle a tablespoon of oil in a large pot of salted (like the ocean) rapidly boiling water, add linguine and cook accord- ing to directions on package. Meanwhile, in another large heavy bottomed skillet, melt 2 tablespoons butter and olive oil over medium-low heat. Add the garlic and sauté for one minute. Be careful, the garlic burns easi- ly! Add the shrimp, salt and pepper, red pepper flakes, and sauté until the shrimp have just turned pink (about 5 minutes), stirring often. Remove shrimp from pan. Add white wine, lemon juice, lemon zest, 2 table spoons butter and parsley. Bring to a low boil. Return shrimp to sauté pan. Drain pasta, place in large dish and pour shrimp scampi and sauce over pasta. Toss gently! Prep: 15 minutes Total: 40 minutes Yield: 4-6 servings Dining for the Holidays
