Directions: By: Rosemary Scoleri Paisano's Restaurant Ingredients: 2 cloves fresh garlic, chopped Salt and fresh ground black pepper 2 tablespoons of olive oil, plus more for the bread 2 shallots, coarsely chopped 2 cups white wine 1/2 pound pancetta, chopped in small cubes 2 pounds New Zealand Mussels or (cultivated black mussels) 2 tablespoons cold unsalted butter 2 tablespoons chopped fresh rosemary leaves 1 baguette, sliced lengthwise (1/4 inch thick slices) Heat 6 quart pot on high heat then add pancetta. Saute pancetta until completely brown and crispy. Remove from pot and place on paper towel to absorb fat drippings. Wipe inside of pot with paper towel add olive oil heat on medium high heat. Add gar- lic cook till lightly golden brown, add shallots and cook until shallots soften (about 4-5 minutes). Add wine bring to a boil and stir in mussels. Cover the pot and cook the mussels until all of them have opened (about 6-8 minutes), discard any that do not open. Remove the mussels with a slotted spoon to a large bowl. Bring the cooking liquid to a simmer and whisk in the butter. Season with salt and pepper to taste, stir in the rosemary and pancetta. Simmer 1 minute and then pour mixture over mussels and serve immediately with grilled bread. Brush one side of baguette with oil, season with salt and pepper and grill, seasoned side up until lightly golden brown. Rosemary Prep Time: 15 min Cook Time: 30 min Serves: 4 Buon Appetito!
