Fresh Beer Batter Bread Avocado Toast

Ingredients

  • 2 cups all-purpose flour
  • 1 cup, gluten-Free All Purpose flour
  • 3 tbsp organic packed brown coconut Sugar
  • 1 tbsp baking powder 
  • 1 tsp salt
  • One 12 fl oz beer bottle at room temperature
  • 2 tbsp unsalted butter, melted
  • mashed avocado
  • Egg
  • Green chilies and lime juice

Instructions

  1. Preheat the oven to 375 F and grease a 9-by-5 inch loaf pan (we used avocado oil). Note that we lined the pan with parchment paper for easier removal.

  2. Mix together the flour, sugar, baking powder, and salt in a bowl. Add the beer and stir about 20 strokes.

  3. Once the batter is lumpy, pour it into the loaf pan and drizzle with butter.

  4.  Bake for 40-45 minutes.

  5. Let it rest in the pan for 5-10 minutes.

  6. We highly recommend using this fresh homemade bread for avocado toast and egg. Mash the avocado separately, add lime juice, finely chopped green chilies, and salt.  The egg can be a fried egg.
