Carrot Cake With Walnuts (Eggless)

Ingredients

Cake Ingredients

  • 2 cups of self-rising flour
  • 3 cups of very finely shredded carrots
  • 1 cup of roughly chopped walnuts
  • 1& 1/4 cups of vegetable oil, preferably Canola
  • 1 & 1/2 cups of sugar. I take a mix of white & brown
  • 1 tsp of pure vanilla essence
  • 3 tsp of ground cinnamon powder

Ingredients for Icing

  • 1 stick of melted butter
  • 8 ounces of cream cheese
  • 1 tsp of pure vanilla essence
  • 1 & 1/2 cups of powdered sugar
  • 1/2 tsp of ground ginger
  • 1 tsp of ground cinnamon powder

Instructions

  1. In a bowl, put self-rising flour and add sugar.

  2. Stir in vanilla essence, cinnamon powder, shredded carrots, & oil.

  3. Stir vigorously

  4. Add the walnuts

  5. Grease a deep cake pan and bake for 50 minutes on 350 degrees C. Cool on a rack. I ice the cake the next day.

Icing

  1. Mix all the ingredients together and whisk for about 5-7 minutes until the icing is smooth and creamy

Recipe Notes

If you like your cakes with less icing, use only half of each icing ingredients.
