Maple Nut Granola

Ingredients

  • ½ cup olive or canola oil
  • ½ cup pure maple syrup
  • ¼ cup dark brown sugar
  • 1 teaspoon kosher salt
  • 4 cups old-fashioned rolled oats
  • 1 cup walnuts or pecans, chopped
  • ½ cup raw sunflower seeds
  • ½ cup raw pumpkin seeds

Instructions

  1. Preheat oven to 300°.

  2. In large measuring cup, combine oil, maple syrup, sugar and salt.

  3. Put all other ingredients in large rimmed baking pan. Add oil mixture and mix well.

  4. Bake, stirring every 15 minutes, until golden brown and dry, about 45 – 55 minutes. Cool completely and store in tightly sealed container.

My mom adapted this recipe for me from Good Housekeeping. Right now it's in hot demand from friends whose New Years' resolutions include healthier eating. With fresh berries and yogurt, this is a healthy way to start the day!
