Preheat oven to 350 degrees
Clean & puncture yams
Bake for 1.5hours (until soft when tasting with a fork)
Remove and let cool
Scoop contents (no skins) into a large mixing bowl or a 4 qt. pot
Add remaining ingredients, mix with a hand mixer
Stir in a small amount of cold water if too thick or until desired consistency
Test for heat, add more cayenne if desired
