Cooking Preparation:

Beat one egg, coat the shrimp with the corn starch, dip in the egg mixture,

add salt & pepper to taste and drop into the panko bread crumbs to coat them. Deep fry in a 375° hot oil.

Drain the shrimp on the paper towel. Next prepare the 2 sauces: first mix in a small bowl half of the

mayonnaise, 4 tablespoon of water with the sriracha sauce and put on side. Second sauce: combine the rest

of the mayonnaise with the 2 tablespoon of rice vinegar and add the sugar. Combine the shrimp and the

sriracha sauce. Put in a martini glass and pour the sweet sauce on top together with the hot oil. Garnish

with the julienne scallions.

Gallop Shrimp

Ingredients:

8 oz. baby shrimp

1 egg

5 tablespoons corn starch

10 oz. panko Japanese

bread crumbs

Pinch salt & pepper

3 cups of cooking oil

3 tablespoons sriracha

hot chili sauce

Half cup of mayonnaise

2 tablespoon rice vinegar

Half teaspoon of sugar

4 tablespoons of water

1 tablespoon hot chili oil

Julienne scallions
