Located on the first floor of the Bridgewater Marriott, the atmosphere of the restaurant encour- ages a sense of community. The bar stretches across the front of the restau- rant, creating an open space inviting guests of the hotel and patrons of the restaurant to intermingle over delicious drinks and food. Farmhouse tables border the front side of the restaurant, with small round cocktail tables bor- dering the windows overlooking the outside courtyard. At the center of the room is a sprawling zinc table, hence the second half of the restaurants namesake. “Eat locally, drink socially,” as Chef Goodchild says. Nearly all ingredients used in the kitchen at Booker & Zinc come from small local farms in the tri- state area; not only ensuring freshness of ingredients, but supporting local economies and helping small business- es thrive. While Booker & Zinc is not a farm-to-table restaurant, they strive to include as much local influence as pos- sible in the menu. Some of the New Jersey Farms that Booker & Zinc are affiliated with are Griggstown Farm Princeton, Fulper Farms of Cherry Hill, Valley Shepherd Creamery of Long Val- ley, and others. With a menu changing seasonally throughout the year, Booker & Zinc serves classic plates with a unique feel. Signature flatbreads are made in a state of the art pizza oven, perfectly crisping the edges and melting the center. Creative combinations and top- pings of the flatbreads, like avocado, chicken, eggs, prosciutto and more create a gourmet flatbread experience. One of their most popular share plates are the “Mini Short Rib Tacos,” with organic miniature taco shells locally made, fresh salsa, and barrel aged goat cheese. The “Roasted Beets and Mache” salad is served with local goat cheese crumbles, crushed pis- tachios, and drizzled with homemade vinai- grette, reflecting the creativity and careful thought that goes into each item on the menu. At Booker & Zinc, the philosophy behind the bar is the same as within the kitchen: fresh ingredients and fresh recipes. Syrups used in seasonal cocktails such as lemon, lime, grape- fruit, strawberry, watermelon and more are home- made with fresh berries and organ- ic cane sugar. The bar features a tem- perature controlled Chill Rite Beer Tap. On tap are a range of craft beers from micro-breweries in New Jersey, New York, and Pennsylvania. Additionally, the bar is fully equipped to serve sig- nature Starbucks items. Booker & Zinc features a social hour Monday-Friday from 4:00pm- 6:00pm with discounted flatbreads and craft beers. After working in the Marriott hotel chain for fifteen years and in the kitchens of boutique restaurants for over twenty, Kevin Goodchild is the Executive Chef of Booker & Zinc and Director of Restaurant Operations at the Bridgewater Marriott.
