Ingredients:
2 large shallots, thin
sliced
4 Tbsp
Red Wine Vinegar
4 Tbsp
White Balsamic Vinegar
or
White Georgia Peach
Balsamic Vinegar
1 Tbsp Dijon mustard
Green Bean and Tomato Salad
with Basil-Shallot Vinaigrette
Let the shallots sit in the
Vinegar overnight, or for a few hours.
Whisk in Dijon and S&P. Gradually whisk
in
Olive Oil.
Cook green beans in boiling salted water
for less than 2 minutes, until tender. Rinse
under cold water. Cover & refrigerate.
Stir basil into the dressing. Toss the beans
with half the dressing and toss the
tomatoes with the remaining dressing
and arrange.
